    Cooking for guest

    SOAK

    • Firstly soak chana overnight
    • Moong dal for dal

    CHOP

    • Peel and chop Potato  for Masala
    • Onion for urulaikizhangu masala, dal and chana masala
    • Tomato for dal and chana masala
    • Coriander leaves for urulaikizhangu masala and chana masala
    • cashews for Jeera rice
    • carrot and potato for dal

    Jeera poli preparation 

    • Knead dough for poli and rest for 30 mins
    • Boil hot water, sugar, cardamom powder, saffron, and cardamom powder to half strong consistency

    Saute and cook

    Potato masala

    • Add the tempering and saute onion 
    • Furthermore add potatoes, salt, and water; mix well and pressure cook potato masala

    Chana masala

    • Do tempering and saute onion, ginger garlic paste; till onion turns translucent
    • furthermore add tomatoes, masala and saute well
    • Add chana and mix well
    • furthermore add water and  pressure cook

    Poori preparation

    • Knead the dough for poori
    • Roll the poori and rest for a few minutes

    JEERA RICE

    • Turn on Instant pot in “saute” mode and add butter
    • When the display shows “hot” add cashews and cumin seeds and saute till. Cashew starts to change color
    • Furthermore add bay leaf, clove, cardamom and give a quick mix
    • Discard the water and add the rice
    • Furthermore, add green chilli and required salt; saute till rice turns dry
    • Add hot water and mix well. Make sure nothing is stuck to the pan
    • furthermore add a few drops of sesame oil and press “cancel”
    • cook for 4 minutes and Do natural pressure release
    • carefully open the lid and Fluff the rice

    Chana masala

    • Add garam masala and  check salt
    • boil for 10 minutes and sprinkle coriander leaves
    • turn off IP and squeeze lemon juice 

    Dal

    • Add ghee and temper with cumin seeds, red chilli
    • Saute onion, ginger, garlic, and tomato
    • Add all the masala, soaked dal, and water; cook for 4 whistles
    • Add water and salt; boil the dal

    Urulaikizhangu Masala

    • Boil the masala and garnish with coriander leaves

    You can also serve poori with chutney variety, sambar, salna, and kurma

    Jeera poli

    •  Roll poori and deep fry in hot oil; drain the oil
    • Warm sugar syrup and soak poori
